200ml newly squeezed lemon juice
500g caster sugar

To make the Drink (yields 850ml, enough for 10)

Directions

To prepare the Cordial: Put all the items in a pan, heat until it reaches a simmer, mixing to dissolve. Next, remove from the stove and leave to reach room temperature entirely. Transfer into a sealable bottle, close it and store in the fridge, it will last for around four weeks.

Preparing the Cocktail Base: Combine every liquids into one big jug, let it rest for 60 minutes, then strain preferably using cheesecloth, making it completely strained.

To serve: Measure 85ml of the premix to a mixing glass containing ice, and stir gently for a minute to cool it down. Strain into a frosted cocktail glass or equivalent, decorate with some cranberries and complete it using a brief mist of mandarin oil over the drink.
